Mama Earth Strikes Again

People who know me know that I don't like grocery shopping.  There is a chore I would happily give up. All the more reason to love getting my organic vegetable and fruit delivery.  Then I am forced to cook with ingredients I might not have purchased.  Our Mama earth delivery this week inspired yesterdays meals.

When the delivery comes it feels like Christmas opening our surprise bin

I couldn't sleep so I was up early on Sunday morning making blueberry muffins

Dinner included delightfully green Swiss Chard

Caramelized onions

Together they create a delicious mix

Organic chicken with goat cheese & basil , chard & onions, and baked acorn squash.
