I may have shared this recipe before under another the Simply Irresistible tab (watch for a new blog look coming soon), but it is worth repeating. These muffins are simple and "healthy". There is sugar in them and I haven't played around to try and find a way to replace the sugar with a better alternative. But they have lots of good things in them that I like to think balances out the sugar bit.
Healthy Raisin Bran Muffins
1 cup light or dark brown sugar
1/2 cup vegetable oil (or canola oil)
1 cup buttermilk
1 egg
2 tbsp cooking molasses
1 1/2 cups natural bran
1/2 cup wheat germ
2/3 cup all purpose flour or whole wheat flour (or a mixture)
1/4 cup sesame seeds
1 tsp flax seeds
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1 cup raisins (or any dried fruit that you like, or a mixture)
Note: You can add any nuts combination of raisins or nuts that you like. I often add pumpkin seeds for an extra crunch.
In a large bowl mix ingredients together in order listed until moistened. Divide batter into 12 muffin pans lined with paper cups. Bake at 400 degrees F for 15-20 minutes.
